In the face of shortages and rising prices

Among the consequences of the war in Ukraine, shortages and rising cost of raw materials. For individuals, but also professionals. The most important thing has to do with flour, but also oil and butter.

The price of flour increases, so inevitably baguettes will also increase. Stocks are running low and it is necessary to prevent basic needs from causing speculation.

“With successive crises, we realize that our food sovereignty has been shaken very seriously.”

Some wonder about this evil which may well be good. Sunflower fields, like palm fields, are not necessarily good for the health of the planet. Moreover, a cough oil boom could allow farmers to diversify.

To illustrate this sequence, Thierry Marx offers a recipe for onion soup.

Ingredients for eight:

600 gr onion, 150 gr lard fat, 2 tablespoons flour, 1 garnish bouquet, 200 gr stale bread, 250 gr Grated gruyere, 4 egg yolks, 4 tablespoons Madeira, 2 liters meat juice (one cube of water can be used) .

Peel the onions, cut them in half and finely chop them; fry them in lard in a saucepan until they turn brown (you can add a pinch of sugar to help caramelize). Add the flour, mix and cook like roux.

Add the garnish bouquet, deglaze with Madeira, moisten with the broth and let it bake (a little trick: put it to boil on the fire and finish cooking in the oven).

Meanwhile, cut the stale bread into cubes. Place these croutons in a greased pan to fry, place on a wire rack and sprinkle with grated cheese. Serve the soup in the pan and top with the cheese croutons.
