600 gr onion, 150 gr lard fat, 2 tablespoons flour, 1 garnish bouquet, 200 gr stale bread, 250 gr Grated gruyere, 4 egg yolks, 4 tablespoons Madeira, 2 liters meat juice (one cube of water can be used) .
Preparation:
Peel the onions, cut them in half and finely chop them; fry them in lard in a saucepan until they turn brown (you can add a pinch of sugar to help caramelize). Add the flour, mix and cook like roux.
Add the garnish bouquet, deglaze with Madeira, moisten with the broth and let it bake (a little trick: put it to boil on the fire and finish cooking in the oven).
Meanwhile, cut the stale bread into cubes. Place these croutons in a greased pan to fry, place on a wire rack and sprinkle with grated cheese. Serve the soup in the pan and top with the cheese croutons.
