Toulon brewery: the secrets of sole meunière.

A chef from Toulon reveals her recipe for sole meunière! Fresh fish, delicious products and a gourmet presentation, so you should try Brasserie Félix. This beautiful bar Toulon welcomes us once again to create a key dish in their menu: sole meunière.

Sole meunière is the classic preparation for this flat fish: fried sea urchin, served with butter and real parsley and seasoned with lemon. The dish comes to us from Norman cuisine and, according to stories, one of Louis XIV’s favorite dishes, King Sun.

Micheline Bazard has already participated several times in the interview game for Info83 cameras. We had discovered his way of cooking as well as his team. The chef had even prepared for us a Provencal-style octopus stew, a typical dish from our beautiful region!

This time it was the preparation of the only meunière we had the opportunity to observe. The chef takes us on board in designing this dish, which has been a huge success at Brasserie Félix in Toulon.

Let’s get to the heart of the matter!

Micheline receives supplies directly from the brewery. The sole is peeled and cleaned in the shelling workshop. An essential step that allows the chef to cook her fish in the best conditions. The chef gets her product ready to cook. An oiled and very hot pan is used to fry the fish previously dipped in flour. A little trick that gives crunchy and a pretty golden color to the dish. After quick cooking, the sole is rubbed with lime, an ingredient that adds liveliness to this comforting dish. Add the parsley and drained butter as a final touch to create a round and gourmet sauce. Micheline accompanies her dish simply with small boiled potatoes.
