Wild garlic soup recipe with light cream

Ingredients for 4 people : 60 gr wild garlic leaves, peeled, 200 gr potatoes, 1 green apple, 3 onions, 1 liter of vegetable juice, 2 tablespoons olive oil, 5 cl fresh cream light juice, fleur de sel by Guérande and i freshly ground pepper.


To prepare this delicious and healthy shoulder recipe: peel and finely chop the onions.

Peel a squash, grate it and chop it into small cubes.

Cook the onions for 5 minutes until translucent. Add the apple and potato cubes. Pour the liquid, bring to a boil and cook for 25 minutes on low heat.

Then add the minced wild garlic leaves and simmer for 5 minutes. Salt, pepper and mix with a blender.


Lightly cream and serve the hot soup, garnishing it with leafy parsley sprigs, minced wild garlic and parmesan.
